Today we’re working on an upcoming collaboration with Honora Winery and Vineyard in Jacksonville VT. The plan is to collaboratively brew a rustic saison, fermented with a blend of our saison yeasts and their wine yeasts. In October, we will harvest a variety of their Vermont-grown white grapes, crush, add to some of their Chardonnay barrels, and add the saison on top for an extended aging cycle.

The name Janus, pays homage to our Honora friend, vineyard manager, and head winemaker Janice Stuart, and to Janus – the God of Beginnings in ancient Roman religion and myths.

We’re tasting a variety of saisons, wines, grapes, and ingredients today. Our initial pilot batch of Janus should take place sometime within the next month or two. Stay tuned!
